Edamame Fried Rice

 

vegan edamame fried rice from the herbivore house

 

it’s been crazy busy at the herbivore house, so we’re slacking on the posts – sorry. thought we’d get back to it with a super quick and easy vegan dish that we whip up on busy weeknights. you just need to have leftover brown rice, frozen edamame, a few cloves of garlic, and a bit of olive oil and soy sauce on hand. from the moment you walk in the door to the time dinner is on the table, it’s less than 10 mins!

– ingredients –

  • 2C leftover brown rice (or minute rice)**
  • soy sauce, to taste
  • 1 (10-12oz) bag frozen edamame, shelled (not in the pod)
  • 2-3 cloves of garlic
  • 1T olive oil

– directions –

  1. heat the frozen edamame in a covered skillet over med heat, 4mins. (if using minute rice, start that in a separate covered pot first)**
  2. meanwhile, chop the garlic. then, drizzle the olive oil into the skillet with the edamame and add the chopped garlic.
  3. saute until garlic is fragrant, then add the brown rice** and saute until heated throughout. add soy sauce to taste.

note: you can jazz this up with carrots, baby corn, mushrooms, whatever you like and have on hand. if you’re not vegan, mix an egg in at the end and toss until cooked through.

**when preparing the brown rice, i always substitute a few Tbs. of the water for soy sauce – it cooks the flavor into the rice.
